  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 cup red lentils, rinsed
  • 1 medium carrot, diced
  • 1 small zucchini, chopped
  • 4 cups low-sodium vegetable broth
  • 1 cup full-fat coconut milk
  • Salt and pepper to taste
  • Juice of ½ lemon
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in garlic and ginger, cooking for 1 minute until fragrant.
  3. Add turmeric and cumin, stirring to coat the onions and spices evenly.
  4. Pour in the rinsed lentils, carrots, zucchini, and vegetable broth. Bring to a gentle boil.
